Swedish Meatballs Over Rice
Yield: 4 servings
Ingredients
| 1 | pkg. | (1 oz.) onion soup mix | |

| 3 | lb. | ground beef | |
|
|
|||
| 12 | oz. | ginger ale | |
|
|
|||
| 12 | oz. | bottle ketchup | |
|
|
|||
| 2 | eggs | ||
|
|
|||
| 1 | cup | cooked rice | |
|
|
|||
Directions:
In a large bowl, combine ground beef, eggs and onion soup mix. Mix well; set aside. Place a large skillet over low heat. Add ketchup and ginger ale; stir together. Roll ground beef mixture into small balls and place in skillet. Increase heat to medium, cover and cook for 20 minutes. Scoop meatball mixture over rice before serving.
